Through the marvels of consumerism, I bought a slow cooker on Monday in a Black “Friday” deal. It was almost half price and only £21 so I couldn’t say no. Ok, so I know I’m behind the curve on this one. So when I started raving about my new slow cooker it’s no surprise everyone already seemed to have one. That said, one of my current goals it so be more prepared for meals, especially at work. So last night I set to work making a brisket casserole.
So to start with I seared the brisket, which I’d seasoned, on all sides in a frying pan with a little oil. Then chucked it in the cooker with tomatoes, broccoli and courgette.
Next I sautéed some onions, peppers, mushrooms, spring onions and carrots in the same pan I’d seared the beef in. Once these were looking good I added some stock to them with some Nando’s medium piri piri sauce and let them simmer for a bit. I then added the whole lot to the pot with the beef and the rest of the stock. Set the cooker on low and left it overnight.
I’ve just been down to check it out and it’s incredible. The brisket has basically dissolved into a pulled beef-like spaghetti and the veg are soft and golden but have retained their shape. The kitchen smells incredible and the stew tastes bloody marvellous. I know that I’m having for lunch and dinner today (and probably tomorrow too).
